We are missing functionality that is provided in Nintex Workflow for 365 on task reminders that is not available in NAC task reminders. We are unable to send a specific number of reminders out after task has been sent out.
Our options now are to send one reminder out, and if subsequent reminders are needed, we have to specify the number and unit of time for that number. Which translates to subsequent reminders going out indefinitely until task is completed.
It doesn't ask us the "number of times to repeat" like 365 did so if we only wanted to send 2 subsequent reminders out after the initial reminder, we can't in NAC.

Can you describe what would happen to the task if the assignee still doesn't respond after the 2nd reminder? Would the task be automatically updated with an outcome or escalated?
