Check if data in Form is older than the item in SharePoint before allowing change submission

We have had a scenario where someone opens a SharePoint item and displays the content in a Nintex Form which shows current content. However, in the background we have a workflow running that has changed the item content.

The issue is, if the content is updated in the Form and changes submitted, the stale content in the Form is then written back over the newer content added by the workflow.

This has caused some item to be reverted back to Pending, even though they have been Approved via the workflow when the form was open.

It would be great to check the version of the item and content on the form before it is written back?
