For more information, here is how I was able to get around this limitation:
1. Run a RegEx on the 'Rows' from a table
Operation = Replace
Pattern = (?<=\[|,)"(?=\{)|(?<=\})"(?=,|\])|\\(?=")

2. Query JSON
JSON Source= rowsJSON variable
JSONPath = $[?(@.apiNameOfTheFieldSearching == 'valueToSearch')].apiFieldNameToReturn
