Today, you can use Organization-wide email addresses in our Email delivery option.
You can add these in Salesforce Setup, and use them in your Document package configuration.

A possible approach could be to add multiple Org-Wide addresses to Salesforce, and then have multiple email delivery options available at runtime for each.
We don't have any current plan to add this as a choice for the user running the package, however we will monitor this idea for votes.
