Nintex Sign powered by Adobe Sign multiple signers at one stage

It would be helpful to be able to specify multiple e-mail addresses that can sign at one stage of the Adobe Sign process. For example, you may have 3 people in a group that could sign off on a purchase order, but you only need one of their signatures and you want to be able to track which one of them has done so.
Searching the web, it appears in Adobe Sign that could be accomplished by using Recipient Groups in their user interface. I know for a specific agreement in Adobe Sign you can add an alternate signer if you’re at that signing step, but that’s a reactive approach.

Looking at the Adobe Sign REST API, it looks like that it could be done by having multiple objects passed in the “ParticipantSetInfo”, each for every recipient that could complete a specific step.
